A rich Buttermilk Layer Cake with apricot preserve filling, frosted with Double Chocolate Cream Cheese Buttercream Frosting! The golf ball and the tee are made out of homemade vanilla fondant.

An Apple a Day...


Cake Pops for teacher thank you gifts! I made the stems and leaves out of fondant and dipped chocolate cake balls in red candy melts! What a nice way to say, "Thanks for a great year!"

Stanley Cup Cake and Pink Baby Shower Cake

Hockey Cake #2 this week! I took a leap of faith and hoped that since the birthday boy's dad is a Penguins fan, that they'd love a cake based on the Stanley Cup!


I stacked two 6" layers on top of two 8" layers for the base of the trophy. The "cup" was the bottom half of a ball.


I'm not sure, but I think my pictures are fuzzy because someone licked my point and shoot camera... it's been a rough week!


I took another risk this week and made a layered baby shower cake without fondant. While the frosting isn't perfectly smooth, I like how the strawberry seeds add a natural texture to the cake.

Carolina Hurricanes Baby Shower Cake


This mom-to-be loves the Carolina Hurricanes! A couple of months ago I made Strawberry Cupcakes for her birthday. And this week, for her shower, a Hockey Puck Cake, topped with the Hurricanes logo, and baby bottles, strollers, and tee shirts around the sides. The red, white, and black allude to the baby mobiles of the same colors and bold patterns that are thought to stimulate baby's vision! The cake is a moist Strawberry Buttermilk Cake, Strawberry Buttercream Frosting, and is topped with homemade Fondant!

South Carolina Cake

We said a sad goodbye to our friends Jessie and Adam this weekend. They are off to begin their next adventures in life in Charleston, South Carolina. We watched a great movie that took everyone down memory lane. It chronicled their lives and everyone's friendships. The movie actually had a lot do with triathlons! Adam and Jessie met at the first meeting of the UNC Tri Club, that Adam co-founded! This cake was the perfect goodbye! *Sniff*Sniff* It was Jessie's favorite combination of Baker's Cakes Signature Chocolate Cake with Strawberry Buttercream Frosting, topped with homemade Fondant!

(I send my beloved Canon Rebel XS back tomorrow and hope to have it back in a couple of weeks! Fingers crossed!)

Pineapple Upside Down Cake

I'm in mourning. My beloved Canon Rebel XS is on the fritz. I have to send it to the repair shop. So, whilst I am indeed baking up a storm here, I have little to no motivation to document it. In order to drown my sorrows in sugar, I whipped up what may be one of my favorite cakes.




Pineapple Upside Down Cake! It's not the most elegant cake, it's not fancy, or elaborately decorated, but I love how it tastes! It's homey, comforting, and sweet! I got my recipe right out of The Joy of Cooking. But here's a link to one, just in case!

I also tried a little editing to see if I couldn't help my poor Fuji point-and-shoot a bit. First, I tried black and white. But that didn't seem to make it look tasty or artsy.


Next, I increased the exposure and brought down the highlights. I find it to be a little grey. Again not terribly appetizing. 



Then I went to my fool-proof: boost the color, antique, and fade. Nothing doing.


I'll just have to eat a piece or three to make me feel better! The little one didn't even wait for it to cool off before she devoured a piece! Rest assured, this one tastes better than it looks...

Farm Cupcakes


These Farm Cupcakes were for a little boy's first birthday party. I made Lemonade Cupcakes: Lemon Cupcakes sprinkled with Lemon Syrup, topped with Lemon Buttercream Frosting. As well as Baker's Cakes Signature Chocolate Cupcakes with Double Chocolate Cream Cheese Buttercream Frosting!


The birthday boy's mother sent me his birthday-in-a-box for inspiration. I knew immediately that I had to incorporate the cow spots and the barn. It wasn't until I looked a little closer that I discovered the adorable bug, chicks, birds, and the pig with the party hat!


This is the first time that I have used the Wilton Cupcake Stand and I'm undecided about it. I felt like the tiers either needed to be bigger to hold two rows of cupcakes in depth or smaller so there wasn't as much space between the cupcakes. Never-the-less, it made a great presentation:

I don't know why I haven't thought of this sooner! Peanut Butter Cake Bites! These were like Reese's Cups, peanut butter cookie dough, and peanut butter truffle, all dipped chocolate. I rest my case.
